Brunch Bake
1 C Uncooked Rice
1 C Chicken Broth
Parmesan Cheese
1 Stick Melted Butter
1 Pound Cottage Cheese
½ pound ricotta cheese
1 C Summer Sausage (bite size pieces)
1 Package Frozen Spinach (drained well)
1 Package Knorr Vegetable Soup Mix
1 t Onion Salt
1 t Garlic Salt
Pepper
12 Eggs
Grated Cheese
Cook rice per package directions substituting 1 c chicken broth
for 1 of the cups of water. Grease 9 X 13 baking dish
and sprinkle bottom with parmesan cheese. Mix rest with 9 beaten
eggs (reserving 3). Pour into dish and pour 3 beaten eggs over
top. Bake at 350 for about 45 minutes. I put some grated
cheddar and mozzarella on top for the last 10 minutes of baking.
