Bodacious Brownies
5 large eggs
3 cups sugar
1 generous tablespoon vanilla extract
1 cup butter
8 squares unsweetened baking chocolate (yep, the whole package!)
1 1/2 cups flour
pinch salt
2 cups walnuts/or pecans (don't chop...the key word here is bodacious)
confectioners sugar
Preheat oven to 350°
Beat eggs, sugar and vanilla on high speed for 10 min. Don't skimp on the time.
Melt the chocolate and butter together on a low heat source... microwave works great. When melted and blended together let cool for a few minutes.
Add chocolate mixture to egg mixture a little at a time and blend well.
Add flour and salt... do not overmix. Add nuts.
Bake 25- 35 min. in an 11X 13 ungreased pan. I found a glass one works best for me. Don't overbake -- the toothpick test doesn't work well on brownies.
Cut into 2-3 inch squares when done and sprinkle with confectioner's sugar.
