Irish Peasant Lunch

green cabbage
red potatoes
onion
seasonings of your choice
brown mustard (optional)

Cut the cabbage into about 1/4 to 1/2 inch strips (doesn't have to be exact). Cut the potato into smallish cubes. Slice the onion into medium sized pieces. Put all of it into a saucepan with about 1/2 inch of water. Boil it all for as long as it takes to cook the potatoes to your liking.

There aren't exact amounts because you can use as little or as much as you like to serve your particular fancy. The creater of this recipe used about half a head of cabbage, one potato, and half an onion for 1 large serving or 2 small ones. Season as you like - the creater used a little salt and some Mrs. Dash. Brown mustard goes well with this. Enjoy!
