Pecan Pie Bars
1 pkg yellow cake mix
1/2 cup butter, melted
4 egg, divided
1/2 cup sugar, brown
1 cup corn syrup, light
1/2 cup corn syrup, dark
1 tsp vanilla
1 cup pecans, chopped
Set aside 2/3 cup cake mix. Combine remaining cake mix, butter, and one egg. Mix with fork until crumbly. Press mixture into a greased 9 x 13 baking dish. Bake at 350 for 15 to 20 minutes, or until light golden brown. Combine reserved cake mix, remaining eggs, brown sugar, corn syrups and vanilla in a mixing bowl. Beat at medium speed with mixer for 1 to 2 minutes. Pour over partially baked crust. Sprinkle with pecans. Bake at 35 for 30 to 35 minutes. Cool and cut into bars. Yield: 24 bars
