Pumpkin Bread

3 eggs
1 cup oil
2 cups sugar
2 cups canned pumpkin
2 teaspoons vanilla
3 cups flour
1 teaspoon soda
1/4 teaspoon baking powder
1 teaspoon salt
3 teaspoons cinnamon
1/2 cup chopped nuts

Beat eggs until light and foamy. Add oil, sugar, pumpkin and vanilla. Mix lightly, but well. Mix flour, soda, baking powder, salt and cinnamon in bowl. Add flour mixture and blend. Add nuts. Bake in two greased 9x5 inch loaf pans at 325 for 1 hour, or until tested done.

Remove from pans at once and cool on racks.

I've also added Nestle Cinnamon Chips to this recipe for additional cinnamon flavor - it comes out really well!
