Quiche Lorraine
1- 9" pie crust
4 strips of bacon (or a little more)
1 onion, thinly sliced
1 c. Grugeneor swiss cheese, cubed
1/4 c grated parmesan cheese
4 eggs, lightly beaten
2 c. heavy or 1/2 and 1/2 cream
1/4 tsp. nutmeg
1/2 tsp salt
1/4 tsp white pepper
Preheat oven to 450 degrees: line pie plate and bake 5min. cook bacon until crisp-remove from skillet. Pour off all but 1 tbs fat. Cook onion until transparent. Crumble onion and cheese over the inside of pie crust. Combine eggs, cream, nutmeg, salt and pepper, and strain over onion and cheese mixture. bake for 15 min. reduce temp to moderate (350) and bake until knife inserted comes out clean, about 10 min longer. Serve immediately.
