Sharon-Marie's Sausage and Wild Rice Casserole (Spicy version - Mild version follows)
(1) 6oz package Uncle Ben's long rain & wild rice mix
1 lbs Jimmy Dean's hot sausage
1 cup white onions, chopped
1 lb fresh mushrooms, chopped
1/8 tsp dried oregano
1/8 tsp dried marjoram
1/8 tsp dried thyme
1/8 tsp dried basil
¼ cup unbleached flour
¼ cup whipping cream
2 ½ cups chicken broth
dash of Tabasco (or sprinkle of cayenne pepper)
1 tsp salt
1 tsp pepper
¼ cup sliced almonds, toasted
Cook rice according to package directions. Place in large mixing bowl.
In large skillet, cook sausage on low - medium heat. Remove sausage from skillet, but do not discard drippings. Mix sausage together with rice in bowl.
Semi-cook onions in sausage drippings. Add mushrooms / herbs. Mix together with sausage and rice in bowl.
Heat oven to 350 (F). Whisk together flour, cream and broth. Bring to slow boil, stirring constantly until mixture becomes smooth. Pour over contents in in bowl and stir well. Then put mixture in buttered casserole dish.
Top with toasted almonds. Bake 45 minutes, uncovered.
